docs: add section for running tests for individual classes only 

- Added examples for each test class: DocusignCompositeEnvelopeBuilderTest, DocusignEnvelopeRequestHandlerTest, DocusignAPIServiceTest, DocusignCredentialsTest
- Included both Bash/WSL and PowerShell versions
- Useful for targeted testing during development
- Includes --code-coverage flag for coverage metrics
